Savory Chicken Chimichangas





Mexican cuisine is a staple in our household, and these chicken chimichangas are one of our favorite dishes. This recipe was passed on to me by my former coworker, Sherry, and it’s become a staple in our meal rotation. The combination of the crispy tortilla filled with savory chicken, cheese, and spices is a delicious and satisfying meal that my family loves.


What makes this dish even better is how simple it is to make. You only need a few ingredients and about 30 minutes of your time. The filling is made by stirring cream cheese, pepper jack cheese, and taco seasoning, then combining it with cooked and shredded chicken. The filling is then spooned onto flour tortillas and rolled up. After that, the chimichangas are baked until golden brown. This is a recipe you can add anything to the filling, such as bell peppers and onions.


We love serving these chimichangas with Spanish rice, queso, chips, and salsa. The meal is a crowd-pleaser and always a hit with our guests. I love that I can make a large batch of chimichangas and freeze some for a later time, making it a quick and easy meal when I’m short on time.
